60DAYS chocolate is proud to be a newly improved product by a 100% local process. Compared to conventional production process of 6 months to 2 years, 60DAYS marks a breakthrough in streamlining production to just 60 days. Therefore, the freshness and pristine flavor of the cocoa beans are preserved.

Thanks to cocoa gardens and factories in Ben Tre and Binh Duong, 60DAYS ensures a clean & sustainable supply grown by local farmers, together with a fermentation stage under designed standards and a low-temperature roasting formula.

Although the 60-day journey is short, it is 60 days of hard working effort to ensure the result is exquisite. We are proud that 60DAYS is not only a premium chocolate line but its story is also an inspiring and meaningful journey, bringing greater values to the environment, community, and farmers.

THE DAWN OF PASSION

30 years ago, Gricha Safarian, a Belgian native, made an unlikely trip to Vietnam and fell in love with the country. From that initial visit, he left convinced that Vietnam had a unique potential which could not be ignored, to produce high-quality cocoa. Thanks to its diverse production approaches, chocolate made from Vietnamese cocoa is known for subtle fruity and floral notes. 25 years later, Puratos Grand-Place remains a pioneer in the Vietnamese chocolate market, constantly pushing the status-quo and creating value-added products that are ethically sourced and close to the community

ベトナムのカカオは、国際カカオ機関(ICCO)によりアジアで2ヶ国目となるファイン・フレーバー・カカオ(FFC)に2016年に認定されました。他の農産物と同様に、カカオの香りもその土地の気候や土壌から大きな影響を受けます。「60デイズ」は強いカカオの風味、ユニークな酸味、シャープでフルーティーなアロマのバランスがよいと評されるベトナムで育まれたカカオだけを使用しています。

Sustainable cocoa sourcing programme

CACAO-TRACE is a global sustainability  program of Puratos Group, which ensures a consistent superior taste for chocolate lovers, and more income for farmers. This creates value for all, from farmer to consumer.

Cacao Trace Fresh Certificate, the next level of CACAO-TRACE, is a proud landmark of 60DAYS on the journey of building and sharing values, increasing benefits for Vietnamese cocoa growers.

- Build values:

Elevate cocoa flavor thanks to a bean classification, fermentation, drying, and roasting process closely controlled and monitored under strict guidelines.

In CACAO-TRACE Fresh, the process “from farm to chocolate” is locally connected and transition time is minimized to prevent the decrease in flavor’s freshness.

- Share values:

Chocolate Bonus: with per kilo of chocolate sold, €0.10 goes directly back to the cocoa farming communities we work with.

We also provide cocoa farmers with training and premium pricing.

CARBON NEUTRAL

All sweet ripe fruits go through a bitter green stage. Puratos Grand-Place's journey to draw more green for the planet also encountered many challenges. However, surpassing strict standards, our 60DAYS chocolate product has received Carbon Neutral Certificate. This is the fruit of sustainable development efforts that our company has been continuously striving for more than a decade.

Carbon Neutral certification is assessed and accredited by CO2logic of South Pole. PGPI's 60DAYS product has met CACAO-TRACE standards with the process "from farm to chocolate bar"; production time shortened to 60 days; CO2 emissions reaching requirements...

カカオ農園

色とりどりに実ったカカオ。ベンチェ省のカカオ生産者の皆様が収穫したばかりのカカオはピュラトスが運営するポスト・ハーベスト・センターに届けられ、すぐに発酵のプロセスが開始されます。

「60デイズ」のチョコレートは、このフレッシュでジューシーな白いパルプ(果肉)に覆われたカカオ豆から作られます。カカオの種の植え付けから収穫まで、カカオ生産者とピュラトスのカカオ栽培専門チームの共同作業で行います。

ポスト・ハーベスト・センター

カカオ豆はカカオポッド(殻)から取り出したうえで、収穫後6時間以内ポスト・ハーベスト・センターに運ばれます。発酵を左右するカカオパルプに含まれる糖分のチェックなどの品質検査を経て、自然発酵をスタートさせます。香りの良さを大切にする「60デイズ」のチョコレートにとって特に重要な工程です。発酵学に精通したピュラトスの技術者が適切な発酵プロセスをとることにより、香りの元になる成分

乾燥

ポスト・ハーベスト・センター

次の14日間は、発酵を終えたカカオ豆を天日で丁寧に乾燥させます。こうして発酵で醸成された香りの元を閉じ込めます。基準とする水分量になるまでカカオ豆を乾燥したら次のステップに進みます。

カットテスト
と移動

ポスト・ハーベスト・センター
(ベンチェ省)

発酵と乾燥の結果を確認するためにカカオ豆の断面をカットし、内部の色や香りをチェックする「カットテスト」を行います。専門スタッフが特別な器具を用いてカカオ豆内部の微妙な色の具合をチェックします。この結果はバッチ毎に記録され、基準を満たしたカカオ豆のみがロースティング、グラインディング(すり潰し)を行う自社工場に直送されます。一般的には、カカオ豆はこの品質確認の後、麻袋に入れられて倉庫で長期間保管されたうえ、次工程を行う他国にはるばる輸送されていきます。「60デイズ」はカカオ豆のフレッシュさを最優先にするため、品質確認後すぐに隣接する自社工場でカカオマスに加工します。

ポスト・ハーベスト・センター

乾燥後のカカオ豆に熱をかけ、殻から胚乳部分のニブを取り出した後、ベトナムのカカオ豆の風味特性に合わせて低めの温度でロースティングします。必要とされるレベルの加熱をしつつ、できるだけ温度を抑えることで「60デイズ」ならではのアロマを引き出します。その後2段階のグラインディング(すり潰し工程)を経てカカオマスとなり、わずか120㎞離れたホーチミン市近郊のビンズオン省にあるピュラトス・グランプラスのチョコレート工場に速やかに輸送されます。この加工地間の距離の近さも「60デイズ」ならではのフレッシュなアロマをもたらす秘訣なのです。

Fresh cocoa mass trucked to Chocolate factory, Puratos Grand-Place in Binh Duong Province, only 120 km away from Ben Tre. With such a shortened distance, the freshness in cocoa mass is kept for the finest chocolate made.

カカオマスに他の原料を合わせてコンチングなどの加工をし、チョコレートとして完成します。ここでは最終的な品質確認を終えるまで15日ほど費やします。こうして「60日間の農園からチョコレートの旅」が完了します。この「60日」という短期間ですべてのプロセスを完結させることで、「60デイズ」のフレッシュなアロマを実現できるのです。
